White Chicken Chili Recipe

Now that the weather is getting cooler, food that warms the tummy definitely hits the spot.
Nothing hits the spot more than a bowl of chili. Now, I have to admit, I have a lot of fans of the regular chili I make.
My wife being a Filipina, introduced me to her church when we started dating. They are a church which was founded in the Philippines and about 95% of the church in Maryland are Filipinos. At one of the church gatherings I brought a simple ground beef chili. What I discovered was, many of my Filipino friends had never had this dish before, but they loved it.
Ever since that time, chili is requested at gatherings and some seem disappointed if I bring another dish.
I will be sharing my regular chili recipe at some point later, but I think I have perfected an alternative that my friends will find as enjoyable as my regular chili.
After experimenting a few times with different ingredients and different amounts of ingredients, I have now hit on a white chicken chili that tastes as good as regular chili but at the same time over a hundred calories less per bowl.
Below is the recipe.
Ingredients
• 3 pounds boneless skinless chicken breasts, chopped
• 2 medium onion, chopped
• 1 tablespoon minced garlic
• 32 ounces chicken broth
• 3 chopped green chilies
• 2 teaspoons ground cumin
• 3 teaspoons dried oregano
• 1/2 teaspoons cayenne pepper
• 2 cans (40.5 ounces each) great northern beans, drained
• 1 cup (8 ounces) shredded Monterey Jack or Cheddar cheese (optional)
• Salt
• Pepper
Directions
• 1. In a large pot over medium heat, cook the chicken and onions in the chicken broth until cooked. Add garlic, chilies, cumin, oregano, cayenne, salt and pepper and bring to a boil.
• 2. Reduce heat to low. With a potato masher, mash a third of a can of beans until smooth. Add to the post along with the remaining beans. Simmer for about 30 minutes or until the beans are good and hot.
• 3. Top each serving with cheese if desired. Yield: 12 servings.

1 cup (calculated without cheese) equals 249 calories, 1.3 g fat (0.3 g saturated fat), 32.5 mg cholesterol, 998 mg sodium, 35.7 g carbohydrate, 11.8 g fiber, 23.7 g protein.
It’s a fairly simple recipe, but definitely a good one that won’t cause you to fall off your diet any.
I’m planning on bringing this to the next get together that we have at church after this pandemic is over and we are all able to be together again.
