Turkey Meatball Omelet

Who doesn’t enjoy a good omelet? They are pretty easy to make, but depending on what you put in the omelet they can be either low calorie or very high calorie.

I remember I use to meet with some men from the church I attended for a prayer breakfast every Tuesday at 6am. It was held at a very small locally owned restaurant. It was a little diner where the food was good, and part of that goodness was because it was fatty and greasy.

They had a sausage omelet on the menu that I would get a lot of the time. I don’t know where they got there sausage from, but it would drip with grease. I’m sure I wasn’t eating healthy at that time but I did enjoy it.

The best way to ensure that you are getting a healthy omelet is to make your own. I started experimenting and I came up with an omelet similar to that tasty, fatty version I use to eat, except for the dripping grease.

I’ve been eating Turkey meatballs that I get from Walmart for some time now. One day I decided to cut the meatballs in small pieces and add them to an omelet.

I’m glad I tried that. The spices from the turkey meatballs add so much flavor to the omelet that it was like tasting perfection.

I tried to do the same thing later by substituting the turkey meatballs with turkey ham, but it was not the same. A little bland for my taste.

So below is my recipe for a turkey meatball omelet.



Ingredients:

2 - Eggs

4 - Turkey meatballs

1 - Onion

sprinkle on some extra sharp Cheddar, enough to cover the inside of the omelet

Hot pepper flakes

Salt and pepper

Directions:

Chop up the onion and cut meatballs into small pieces.

Cook up onions and meatballs until onions are cooked, set aside.

In a bowl scramble eggs, add salt, pepper and hot pepper flakes and pour into greased pan. Spread mixture out into a circular shape.

Flip egg over and add onions, meatballs and cheese.

When egg is done and cheese is starting to melt, fold in half and remove from pan.

I calculate that all these ingredients work out to about 416 calories a serving. It is one serving that will fill you up.
