Turkey Ham Salad Sandwiches

What I have realized after losing over 100 pounds is that I am more of a foodie now than before I lost my weight. I guess the reason for that is now I pay attention to what I eat and the quality of the food.
Before, I would just eat the food and only eat what I thought tasted good. The problem with going by taste alone is the quality and health factors in the food didn’t matter, therefore I ate too much low quality fatty foods and stayed overweight.
One thing I do now is look at the foods I use to enjoy and see how I can make it healthy. Recently I passed near an area I use to live. I thought of the little town of Jefferson, Maryland. It isn’t a large town and has that country feel to it.
In the town was one convenience store that doubled as a small grocery store. It’s a Mom and Pop store, not a chain.
One thing they offered when I use to stop there was sandwiches on the go at affordable prices. They made them right there at their deli, wrapped up and ready to buy.
They had a nice variety to choose from including Roast beef, turkey, cold cuts, Italian, country ham, chicken salad, tuna salad and my favorite, ham salad.
Of course a normal ham salad sandwich is not the healthiest food, but it tasted so good. Remembering those sandwiches recently made me think, ‘why can’t I make a healthier ham salad sandwich’?
That’s what I did. One of my staples these days is turkey ham. It looks and tastes just like ham, but it is turkey meat and a lot less calories.
That takes care of one of the high calories foods in ham salad. The other is mayonnaise. I now only use either light mayonnaise or whipped dressing. Both are half the calories of regular mayonnaise and you can’t tell the difference when mixed into a recipe.
When I made it I was so pleased because it tasted just like I remembered, yet it has a lot less calories.
So here is the recipe I made recently. I hope you like it.

Ingredients:
1 pound Turkey Ham
1 celery stick
1 onion
1 hard boiled egg
1 Tbsp. light mayonnaise or whipped dressing
2 Tbsp. sweet pickle relish
1 Tsp. yellow mustard
Directions:
If you have an old fashioned grinder like my Mother had this would be the perfect recipe to use it. If you don’t you can still use either a food processor or a kitchen grater because you want everything as finely shredded as possible.
Shred the turkey ham, celery and onion into a bowl.
Either chop up the hard boiled egg or shred it well.
Mix in the light mayonnaise, sweet pickle relish, mustard, salt and pepper.
Mix well.
Serve on toasted bread topped with lettuce.
