Poor Man's Steak

This has become an absolute favorite of mine. I found this recipe in an Amish cookbook and played around with it until I made it my own.
I have always been a hamburger fan, but the first time I took a bite of this, a regular hamburger became a distant second.
The keys to the extraordinary flavor of this dish is first marinating the meat the night before and secondly giving the cream of mushroom soup the time to soak into the meat.
To make this somewhat healthy, I use 93% lean ground beef. Also the portion size is important. If you divide the one pound of ground beef and other ingredients into five portions it is actually only 325 calories a portion. That is doable in any diet.

Ingredients
• 1 pound 93% lean ground beef
• 1 large egg
• 1/4 cup 2% milk
• 40 finely crushed saltine crackers
• 1 onion, finely chopped
• 1 teaspoon salt
• 1 teaspoon ground black pepper
• 1 tsp Worcestershire sauce
• 1 (14.5 ounce) can cream of mushroom soup
Instructions
1. Mix 93% lean ground beef, 2% milk, saltine cracker crumbs, onion, Worcestershire sauce, salt, and black pepper in a bowl.
2. Mix the ingredients well in a glass bowl. Cover and refrigerate from anywhere between 8 hours to overnight. I prefer overnight.
3. Form the mixture into five patties
4. Place the patties into a heated skillet. I use an olive oil cooking spray to lubricate the skillet.
5. Only leave the patties in the hot skillet until the outside browned. Flip after 2 to 3 minutes per side. The insides will still be pink at this point.
6. Arrange the patties in a casserole dish. Pour the cream of mushroom soup over the patties. Make sure the dish is small enough that the soup basically covers the patties
7. Pre-heat the oven to 350 degrees and place the casserole dish inside.
8. Bake the patties in the oven until the cream of mushroom soup is bubbling and meat is brown inside. It should be done in about one hour.
